(Secret Ingredient) Thick and Creamy Homemade Mac n Cheese

Doesn't EVERYONE love macaroni and cheese? I don't care how old you are, a great mac n cheese is hard to beat! This macaroni and cheese recipe is easy, quick, and open to your own experimentation! After all, isn't that the best part of cooking? Okay, enough introduction.. Here's the recipe!

1) Boil enough water for the pasta, adding a little salt to the water, and make SURE to cook the noodles al dente. This is very important as you don't want a mushy cheesy mess.. Or maybe you do? Hey, it's up to you. ;)


2) While the pasta is boiling, melt the butter in a large saucepan on medium low heat. Watch the butter, as you don't want it to burn. Once the butter is melted, slowly add the flour, whisking all the while. Add salt and pepper, milk, whisk whisk whisk. Once the mixture is nice and thick, turn off the heat.


3) By now your pasta should probably be ready.. take a piece out and try it making sure it's still a little chewy. Drain the pasta.


4) Add the cheese to the sauce mixture, and stir until all the cheese is melted. This is one place that's perfect to experiment! Try adding different types of cheese! Try your favorites, you really cant go wrong here. NOW FOR THE SECRET INGREDIENT: mustard. Okay, add a squeeze of yellow mustard probably somewhere around 1/4-1/3 teaspoon, but I would suggest adding a little and tasting the sauce, then deciding if you want to add more. Remember-we want this to be a SECRET ingredient, definitely don't want cheesy mustard sauce. A little goes a long way, you just need a hint.


5) Add the pasta. Stir and serve!
