QUICK NOTE: This recipe can very easily be made without the Espresso Coconut topping. In fact, my husband usually requests that I make one pan of plain cheesecakes for him. Additionally, you could totally experiment with other toppings-use what YOU like! Love strawberry topping? Great! Love chocolate? Crushed up candy bars? Caramel syrup? The possibilities are endless.
